Classic Italian Pasta Salad
This is the pasta salad I bring to every potluck and picnic — colourful, zesty, and sturdy enough to sit out on a table without wilting. Tender pasta, crunchy vegetables, salty cheese and olives, all tossed in a bright Italian vinaigrette. It comes together in 25 minutes and only gets better as it sits.
The key is dressing the pasta while it is still warm so it soaks up all that flavour, then adding a little extra dressing before serving since pasta drinks it in as it chills.
For more crowd-pleasing sides, try my creamy homemade coleslaw, or the smoky charred corn and cotija salad.
Why this recipe works
Dressing the pasta while warm lets it absorb the vinaigrette from the inside for deeper flavour. A vinegar-forward dressing keeps it bright and picnic-sturdy, unlike creamy dressings that spoil in the heat. Adding a splash more dressing before serving revives it after chilling.
What you'll need
Colourful and flexible, mostly no-cook:
- Pasta: short shapes like fusilli or penne hold the dressing best.
- Vinaigrette: olive oil, vinegar, garlic and Italian herbs — sturdy for picnics.
- Add-ins: tomatoes, peppers, olives, mozzarella — mix and match.

Smart swaps: add salami, chickpeas or artichokes. Swap mozzarella for feta or parmesan. Use any short pasta. Make it a meal with grilled chicken. Adjust herbs to taste.
Classic Italian Pasta Salad
Colourful, sturdy Italian pasta salad. Serves 8.
Ingredients
- 400 g short pasta
- 250 g cherry tomatoes, halved
- 1 bell pepper, chopped
- ½ cucumber, chopped
- ½ cup olives
- 150 g mozzarella pearls
- ⅓ cup (80 ml) olive oil
- 3 tbsp red wine vinegar
- 2 tsp Italian herbs + 1 garlic clove
Method
- Cook the pasta in salted water until al dente, drain, and rinse briefly under cool water.
- Whisk the olive oil, vinegar, crushed garlic, Italian herbs, salt and pepper into a vinaigrette.
- Toss the warm pasta with most of the vinaigrette so it soaks in.
- Add the tomatoes, pepper, cucumber, olives and mozzarella. Toss to combine.
- Chill 30 minutes. Before serving, toss with the remaining vinaigrette and adjust seasoning.
Step by step
Step 1 — Cook and dress warm
Cook the pasta al dente, then toss it with most of the vinaigrette while still warm so it drinks in the flavour from the inside.

Step 2 — Add the colour
Fold in the tomatoes, pepper, cucumber, olives and mozzarella. This is where it becomes bright, fresh and crunchy.
Step 3 — Chill, then refresh
Chill to let the flavours meld, then toss with the reserved dressing before serving, since pasta absorbs dressing as it sits.

Pro tips
- Dress the pasta warm. It absorbs the vinaigrette for deeper flavour.
- Save some dressing. Add it before serving to revive the salad.
- Use a vinegar dressing. It is picnic-sturdy, unlike creamy ones.
- Cook pasta al dente. It holds up better than soft pasta.
- Taste before serving. Chilled salads often need a little more salt.
Storage & make-ahead
This salad keeps in the fridge for up to 3 days and actually improves overnight as the flavours meld. Refresh it with a splash of dressing or a drizzle of oil before serving, as the pasta absorbs the dressing. It travels well, making it ideal for picnics and potlucks.
Variations & substitutions
- Meaty: add salami or cooked chicken.
- Greek-style: use feta, red onion and oregano.
- Extra veg: add artichokes or sun-dried tomatoes.
- Smaller batch: use the ½x scaler.
Frequently asked questions
Can I make it ahead?
Yes — it is even better made a few hours or a day ahead. Refresh with a little dressing before serving.
Why does my pasta salad taste dry?
Pasta absorbs dressing as it sits. Reserve some vinaigrette and toss it through just before serving.
Should I use a creamy or vinegar dressing?
A vinegar-based dressing is best for picnics and potlucks, as it holds up out of the fridge.
What can I add to make it a meal?
Grilled chicken, salami, chickpeas or extra cheese all turn it into a fuller dish.
