  • 1 cup (240 g) pumpkin puree
  • ½ cup (120 ml) neutral oil
  • ¾ cup (160 g) packed brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups (180 g) all-purpose flour
  • 1 tsp baking soda
  • 2 tsp pumpkin spice blend
  • ¼ tsp salt
  • For frosting: 8 oz (226 g) cream cheese + 3 cups (360 g) powdered sugar

Method

  1. Heat oven to 175°C / 350°F and line a 12-hole tin.
  2. Whisk the pumpkin, oil, both sugars, eggs and vanilla until smooth.
  3. Add the flour, baking soda, pumpkin spice and salt, mixing just until combined.
  4. Divide between the cases and bake 18–22 minutes, until springy.
  5. Cool completely. Beat the cream cheese, softened butter, powdered sugar and a pinch of spice until smooth.
  6. Pipe or swirl the frosting onto the cooled cupcakes.
